Is there a program that can run on a Mac OS X computer, preferably invisibly, and block access to websites and downloads of a pornographic nature?

There is a "parental control" option that is built-in Mac OS 10.4. Safari also has this option. :)

Look under the preferences option.

Safari > Preferences > Security > its the last option "Enable parental control."

Apple Menu > System Preference > Accounts > Parental Control and you can activate it there for system wide usage.

If you're looking for a straight up filter, Safe Eyes is a good bet, comes with a 15 day trial too, which is handy for checking it out.

You could also use a HOSTS file to block access to certain sites. There are a few websites which link to up to date HOSTS files that weed out ad and porn sites from being viewed.
Can you explain to me how these files work? I have heard little of them.
