I formatted my drive to be used with OS X and I was always under the impression that non-flash memory could not be shared between Windows and OS X, but I'm able to put movies on it and play them through my 360. How does this work? Are 360s an exception or was my initial assumption completely wrong?

As there are a variety of file systems, and USB thumb-drives can be formatted with a variety of them, one can format an HDD with a file system (list below) that is compatible with Mac OS X and Windows.
Open Disk Utility and see for yourself what format the HDD uses.

Yeah, it sounds like maybe you formatted the drive as FAT32 by accident.
