I realize first of all that is somewhat speculative so please don't flame! If and when iPad/iPhone support 4G technology, does anyone know what effect that will have on those of us with unlimited data plans for 3G? My suspicion is that ATT will use the opportunity to eliminate as many unlimited data plans as possible, given their already extant throttling of data for those on this plan. Seems like this will be an issue facing us with iPad 3 and and iPhone 5.

No. Either you'll be grandfathered, or they'll be pedantic and say you only signed up for an unlimited 3G (not 4G) plan and thus aren't eligible for grandfathering.
 
My feeling is that AT&T wont grandfather the iPad 3 (assuming it is LTE capable) because of the intensive data usage. I do figure AT&T will grandfather the iPhone 5 unlimited plan because Verizon did the same with droids that were LTE capable.
