I am researching the best device for an older person with shaky fingers. Naturally I assume that the iPad will be best given its better ecosystem of software and accessories. My thought is that if the screen could be made LESS touch sensitive, it would be helpful. Any ideas? I've heard just using a thick plastic cover but is there anything specifically designed for older people with shaking hands? Software or hardware, really. Thanks!

I don't use a stylus much, but that might be an option.

I have a thicker matte screen protector, the iVisor, and it seem to do just that. Two regular screen protectors will also work.
