Just change the Settings from iCloud to iTunes.

So if I want to backup to iTunes, I'll just turn iCloud off, and then turn it back on after I'm done backing up, correct?

In iTunes, there is a section called backup under the Summary tab of your device.

    There are two choices.

    Back up to iCloud
    Back up to this Computer.

Just choose "this computer" and it will create a backup like it did before. Once done backing up on your computer, just set it back to iCloud...

I did some experimenting and found you can switch from either.

you can also leave that setting alone and right click your phone, and select backup.

    There is an easier way.

Leave iTunes set to WiFi Sync / WiFi Backup all the time. Don't bother changing it.

When you do have a chance to plug your Phone (or iPod/iPad) into your computer, bring up iTunes.

Right Click on your iPhone in iTunes and select "Backup". That will make a backup in iTunes.

Now you'll have Automatic backups all the time using iCloud/WiFi. And you'll have Manual backups any time you plug in and right click "Backup".

    Best of both worlds.
