Is it possible to completely hide a subforum so it is no longer visible, and its threads do not appear in the 'New Posts' listing or in the Tapatalk 'Unread' listing?

Go into User CP and click Edit Options.
If you scroll down there's an option to Exclude Forums.
If you enter the Forum ID number it will block that forum from New Posts. I'm not sure about Tapatalk as I've never used it.
The Forum ID can be found at the end of the url. The ID for this forum is f=66
