Here's my dilemma. I sync my iPad with my MacBook at home. I don't usually carry that with me all the time. If I'm at work, I might want to put a PDF file, or a Word file on my iPad.

Is it possible to just do an app data sync, without doing a full iTunes sync?

What program are you using for PDF/word if it's good reader you don't have to sync, you can either do a wifi share or use a cloud service like box.net, ect.

I use GoodReader/Office2Pro The problem is, I can't even get my iPad on the guest network at work -- I work at a financial services company and all wifi is locked down.

Yes, you can set the second computer to not sync any of your iTunes library, but when you connect the iPad to it, it will show the installed applications and let you copy files in and out. I sync mine to the library I keep on my Mac mini at home, but have used my MacBook Pro at work to move PDFs into Goodreader through iTunes.
