That hasn't prevented us (with analog eyes) from going all-digital for displays, and letting analog video die out. Please don't keep repeating this tired adage.
We've learned to store and transmit audio and visual signals by turning them into information (i.e. encoding them), analog at first. Then we learned that encoding them in digital formats is superior for a number of reasons. Whichever way the information is stored and transmitted, in the end it needs to be transformed into the analog stimulus our senses are equipped to receive.
Saying that digital headphone interconnects are bad because our ears aren't digital is as dumb as saying cassette tape decks are bad because our ears aren't magnetic.
