Hello, how can I check if Instagram is posting my photos/videos without my knowing?

Go to your account and see what's posted there.

That aside, user interaction is needed to post something, somthings just down show up on their own. You can also revoke photos and camera access from Instagram and that would make sure that it wouldn't have anything to post even with user interaction.
