There is a small chance I might miss my window to pick up my Iphone X from the Apple store (which has already had its first installment charged my CC through the upgrade program). Is there a policy on how long they will hold it for? I will pick it up the next day, which I can't imagine being an issue but wanted to see if anyone had any experience regarding an issue like this.
 
I was late for my iPhone 8 pickup window. I think Apple holds the phone for several days before it goes back into stock. If your CC is already charged then the phone is YOURS. I want to say you have 2 weeks to pick it up. The window of time for launch day is just to help control the mass of people rushing to pickup their phones. If you arrive early, thats okay, if you arrive late, thats okay too.

What happens if someone doesn't pick up their paid-for phone in two weeks? Does Apple just refund the account and place the unit back in inventory?
