Ok, so I have two rather large sites in iWeb, plus I don't even have enough RAM for it. So publishing to a folder like I do takes a while. Is there a way to post one site at a time? I'm running iWeb '08.

Yes. Whenever you publish, you have the option to publish one page or one site at a time. I don't remember the exact procedure but I know I've had to use it in the past and I've had both iWeb08 and iWeb09 and it worked in both. Working from memory here... When you edit pages and save them, they show up red and you can right click them and pick publish and just that page gets published.
