Dinner last night. I call it a giant chicken fajita baked empanada.
Raw garlic and herb pizza dough from Trader Joe's with guacamole, black beans, sauteed chicken, onions, and orange pepper, and topped with black bean and corn salsa.
Covered with more dough, sealed (using water), and brushed with olive oil.
Baked until golden brown.
The final product. Nom......glad I have leftovers for lunch!

I've been posting in the Purchase thread... kinda forgot about this thread.
Anyway... been eating pretty much the same types of meals for a couple weeks now. Now that I'm graduated, but can't find work, I have a fair amount of free time. Figured it was time to really start hitting the gym hard and get back in shape. And so I'm trying to also eat a bit healthier, too. More protein. More veggies. And less preservatives, sodas, and candy/junk.
Lots of these:
(I know, I'm killing the environment. I just REALLY prefer disposable bottles)
And usually one or two of these:
... and I typically sneak in a can of Mt. Dew in each day. 😛

Cooked some lasagna with the roommates, took the pic fast before they attacked the plate, with a bad blackberry camera. It looked way better and tasted like glory.

Rice meat? Das ist nicht so erklärend 🙂
I had the best Wiener schnitzel when I was in Wien (2004) ... aber natürlich, oder? 🙂

Haha well actually the sauce didn't even drip onto the rice 😎 At least it isn't a sugary, corn syrupy sauce 😛
16oz steak, thick cut, from the grocery store. Cooked on charcoal until medium; along with greenbeans & mushrooms with just a hint of butter/salt/pepper.
