After a weekend of indulgence just wanted something light.

Chimichuri marinated steak salad, with roasted chickpeas, and Maduros (ripe plantains air fried with fresh ground cumin, and smoked paprika)

Yesterday brunch...

Smoked Salmon, bacon, and Tillamook extra sharp cheddar omelet. Pancakes made with Kodiak flapjack and waffle mix, banana, blueberries, apple, walnuts, steel cut oats, and raw local honey. Fresh fruit on the side.

I also used Kodiak pancake mix this weekend. I have found that adding a teaspoon or 2 of additional baking powder, and a bit of baking soda vastly improves the rise on them.

They usually come out pretty flat, but this time they were super fluffy.

I can feel my belt, pants and shirt straining as I gain weight just looking at that. Good tip btw.

In a coffee shop.
From scratch Penne pasta with sausage, and asparagus in a sauce of lemon juice/zest, white wine, Spanish olives, fresh basil, fresh Italian parsley, apple cider vinegar, and fresh garlic. Covered with grated parmesan , and asagio cheese

Definitely need to refine my technique, but fresh pasta is always delicious, and this was a first attempt.
That looks - and sounds - absolutely delicious.

Woke up a bit earlier than usual this morning, and decided to make a bacon, mushroom, cheese, and asparagus omelette for the first time. I have up until recently had a lifelong aversion to eggs, but I can eat them now.

I still don't care for runny eggs, but I think I will start the pan at a lower heat next time.

Still a tasty breakfast. Good to start the day with veggies, and protein

It's the Ninja Foodi 6-in-1 Smart 10-qt. 2-Basket Air Fryer. We use it up to 10 times each week.

Did you pressure cook, and then air fry?
No. Simple process - thaw the frozen wings (Costco/Sam's Club), pat 'em dry, rub them up with my "secret rub", and then coat with homemade teriyaki sauce (soy sauce, honey, garlic, ginger and onion powder). Lay them in a single layer and air fry at 400ºF for 18 minutes. I shake them 2 or 3 times during the cook, and add a bit more sauce with about 2 minutes to go. The sauce gets nice and gooey. I keep several batches of the rub on hand in various levels of heat, but the rub adds a bit of kick to the sweet teriyaki sauce. Yum, yum.

Found some decent tomatoes in the store and made fresh Gazpacho with homemade garlic sour dough croutons, and a delicious olive oil we brought back from a vineyard in Portugal.

Also grilled up some flanken ribs with a rub, and yuzu Japanese BBQ sauce.

The freshness of the Gazpacho, and the savoryness of the ribs went together well

Went to the store to get rice paper sheets to make summer rolls. All they had were these massive 12 inch ones. Definitely interesting getting the hang of workin with them but I got it eventually.

Korean BBQ extra firm tofu, lots of fresh veggies, peanut chilli dipping sauce. Tasty

Found myself in a part of town I rarely go to, and remembered hearing about this place. They serve what some claim is the best burger in the city.

They only serve one type of burger, no more no less. Simple local beef smash burger on a very soft bun with grilled onions, aioli and American cheese, all for $8.50.

Quite delicious, but next time I will probably ask for it without the Aioli, as I feel like the beef quality could stand on its own.

👆No way any big chain fast food burger can stand against these. We are actually spoiled here with several quality burger restaurants using high quality local ingredients.

... here's a burger I enjoyed during our last stay in Harrison Hot Springs, BC. They use high-quality beef from Alberta in their burgers .. along with other fine local BC products. I have not been an enthusiatic burger fan since the rise of the fast-food chains, but when I can catch one at a small, local, restaurant, and taste "yesterday", I have to pass on some credits to the makers.
