I just saw on iTunes where they are ...but they are not on my phone !

The background is not in the screenshot maker app. That's just how he got the picture of the lock screen to show on an iPhone.

Yes they are! The Background option is only available to the 'device 3D Color (ex: iphone 5C 3D Blue/iPhone 5 3D White) ' option under Settings. From there there's a few to choose from.
For example I'm using 'Old Wood' background option
