Just move the apps or folders to the second page. I do it using my phone and haven't tried it in iTunes yet, but I would think it would work, too. I keep playing around with it, but I don't know if I like it yet or not. Right now I decided to just put two rows of apps at the top and put the rest on the 2nd page.
