AFAIK you cant change the wall on that theme via the handset, you have to do it via SSH.

Find the Black UPS file in Root/Library/themes and there should be two wallpaper.png files.One is the lockscreen and one is the homescreen, rename your wallpapers of choice the same as the wallpaper.pngs and then paste over them the respring.

I can't recall where I got this, but it works. You have 7 color choices. Just copy the color you want to:

/Library/Themes/

Then select it in WinterBoard.
