With iOS9 hints of an iPad Pro/the nice new multi-tasking features, I've been considering a change in my Apple ecosystem. Currently I use iPhone 6 for "ultra" mobile, a Macbook Air 13" for a laptop and a maxed out 2013 iMac 27" as a desktop. I'm a semi-professional photographer and have found the Air somewhat lacking when trying to do work on the road (e.g. Lightroom Exports...). My consideration would be replacing the Macbook Air with a hypothetical iPad Pro and a 15" Macbook Pro. This way I'd have portability when traveling sans-camera equipment, but would have the power and screen area when I do have to crank out images while on the road. Thoughts?

Sounds good, but why even the iPad?

Phone, rMBP, and iMac sounds good to me. The iPad seems redundant, unless the size of the phone bothers you. Should be enough for necessities though.
