So my current phone is about ten years old, and it's time for an upgrade. How does the pre-ordering process through Apple go? I'm going to open a new account with one of the other carriers (Haven't decided which one yet) but I want to keep my current phone number.

You are better off deciding which carrier you want to go with and talking to them about porting your number.
