Does anybody know if it's possible to assign a priority (high, low, etc.) to messages sent via the Apple Mail client? I can't figure it out, but it's hard to imagine Apple would omit such an important feature. . . .

No, it doesn't appear to have priorities. It does have a flagging feature, although not as good. Select the messages to be flagged, go to the Message menu, then the Mark submenu, and then As Flagged (or type command-shift-L). Unfortunately, this only gives equivalents to normal and high priority, and the flagging information is not sent with the message.
