When I open my MBP from when it was sleeping it takes about 3 mins for the screen to appear and the MBP is VERY slow until I restart it? This doesn't happen all the time but most of the time... what's going on and how do i fix this????

I had the same problem. It is software related problem in Leopard. What you need to do is go to System Preferences-->Energy Saver--->Options--->un-check the box that says "Automatically reduce brightness..." Do that for power AC power and Battery.
