I am having problem controlling when the sleep mode activates. I have it set to activate at 11:30 PM and deactivate @ 7:00 AM. The problem is it reactivates during the day, I have shut it down multiple times during the day. This is a recent thing that started with one of the updates. It has to be a settings thing but I don’t know what settings that might be.

have you checked the focus settings on your iPhone? do you have "mirror my iPhone" ON?

Found it the setting in on the Apple Watch.

This setting has been on the Apple Watch since Series 6. I suspect that one of the recent updates defaulted the Mirror My iPhone to on.
