So I recently had some problems with my iPhone 7 where the touch screen wasn't working at times. I could get the phone unlocked with touch ID, but once unlocked, it wouldn't let me click on anything. It was like it was completely frozen. I could either wait a few minutes or just do a hard reset and it would work again.

I ended up getting a new phone, and set it up with my old iCloud back up, and the new phone does the same thing at times.....

Is there anyway I can just transfer over my apps/data and like, pictures and stuff?

I still have some leftover crap from an old jailbreak that always shows up too, so I wouldn't mind getting rid of that.

I don't want to lose my pictures or apps (lots of paid apps, and lots of data within apps) but I think there is something wrong with the software on my back ups.

Your backup is definitely corrupt. The only thing you can do is transfer your photos to your computer and redownload all you apps to iTunes. You can then restore your phone as new and transfer the apps and photos back over, but you will lose all data within the apps. There is really nothing else you can do because of the corruption.

its most likely something in your settings. before you dump everything try just doing a 'reset all settings'. then you won't lose your texts, photos etc. if it still does it, turn on the messages in the cloud, iCloud photo library etc. restore and set up as new. you'll have to set up your emails by hand and re download your apps (don't worry they won't cost you again)

Question. Two actually.

Q1. Between the time you had the jailbreak and now did you update iOS?
Q2. If the answer to question 1 is yes, did you simply update your phone or did you restore and update?

If you simply updated your phone then this is why you have a corrupted backup. And it's why you still have leftover crap from an old jailbreak. It's also why it's advisable to never just update when jailbroken.

Always restore and then update.

Better is to backup, DFU restore and upgrade as new, then restore from your backup.

I have a profile that started with a 3GS and has been jailbroken from iOS 5 to iOS 9 and currently exists on my iPhone 6s+. I've never had any issues with it because I always do what I just preached.

Your only solution now, is as @Mlrollin91 says to do.

Issue being, that won't remove the jailbreak files. So ultimately, it won't solve the OP's problem.

It won't solve OP's problem now yes. Your instructions are correct.

But if OP had been jailbroken, backed up, then DFU Mode upgraded as new and then restored from the backup then his backup would not now be corrupted.

A DFU Mode restore as new removes all jailbreak elements.

But that ship has sailed and OP's only option now is what you have said to do.

Thanks for he replies guys

I was jail broken years ago and probably just did an iOS upgrade when I decided I didn't want to be JB anymore.

So, Do I just back up my phone to iTunes via my computer and then restore from there? Or can I just back up the apps/pics I want to save via iTunes and then transfer back over to my phone when I restore?

Do what @Mlrollin91 suggested. Your backup is corrupt. Restoring anything from it is going to mess things up again. But using iTunes to hold your apps and pictures and then transfer them back (i.e. syncing) will eliminate that.

But you have to start from scratch now.
