Is there a mac program that lets you directly edit the subs in a DVD .iso image? Or a program that let's you add .srt?

That's a really difficult thing to do. You could do this by re-creating your DVD in DVD Studio Pro. You would just rip your DVD with DVDxDV to a new Quicktime video and then import that into DVD Studio Pro and add new subtitles.
