macOS Programming Acrobat Plugin- Direction Needed

Hi Folks-

I need to create a plugin for Acrobat Professional 7 or 8 where templated selection areas of a PDF page have strings extracted and these values are entered into a spreadsheet or database.

I have some programming experience, but most of my recent experience is in Applescripting, which won't work for this, naturally.

What I'm looking for is some idea what I should be looking at- it seems like it needs to be written in C via XCode or CodeWarrior?

If someone could give me an idea what tutorials I should be looking into I'd be very grateful. I have a year to get this done.

or should I be thinking about building an app. in Xcode that uses the native ability to work with pdfs?
