There is a recording studio near here that has two JVC HD250's with green screen setup. They charge $35 an hour to rent the studio so I think that might be a good option to get us started.

We are getting the 7D reguardless since we need a new DSLR for our product photography.

I really can't decide on cameras since there are so many choices and there is no clearcut choice for us.
 
If someone was handing out money to me, I'd get a Sony HXRNX5U, a recording unit, 2 wireless mics and a capture card.

The NX5U is capable of outputting 4:2:2 images via SDI or HDMI and that is apparently better for greenscreening than the recorded 4:2:0 AVCHD. Something to consider.

I have no idea about still cameras.

Don't forget to budget for your studio setup: lights, boom mic, stands, screens etc.

I second the NX5U. Absolutely a beautiful camera for the price.
Edit: Add in the Ki-Pro and WHAM! Awesome for green screen. Got to use this setup a few months ago on a shoot. Ki-Pro in the ProRes, sweet! Too bad you went w/ the 7D, oh well, you got what you need.
 
Probably best to rent one to see if it will work for you. I will suggest you take a look at the panasonic HMC 150. I owned one for a little while. Plenty of controls, records to SD cards. Very comfortable to work with. Here are a couple of sites to help you:
