I will be going to the beach next weekend. As I am careful with my devices, I will be protecting my iPhone from the sun (because of the battery) and, as I have never used a protective film on the screen, I intend to put one because of the sand for the duration of my trip. So, my question is this: by putting the film and then removing it, would it harm the factory applied oleophobic coating on my iPhone?

From my past experience, yes. But it could be caused by the vendor cleaning screen with IPA before applying the protector. Either ways, the adhesive might drag out the hydrophobic coating in the screen when removing the screen protector. Get a capsule case to tide you through your beach outing.

I really appreciate the help.

My fear of losing the oleophobic coating is because my Apple Watch Series 6 has already lost because of time and my screen is full of stains that do not come out for nothing!

Nope. I applied and removed many screen protectors on my iPhone SE and the oleophobic coating has never been affected.
