Bought a 16GB 5s online and got £50 off with American Express deal and 3% quidco which was for that day only.

I've decided I want a 32GB instead though! Can I exchange in store? I.E return the 16GB for a gift card (rather than refund to my cc) then buy a 32GB and pay the difference?

if you bought it from apple, yes, you can go into a store and exchange it for the model you want. you don't need to do a return, they'll just charge you the difference.

I don't think Apple UK stores do this for Apple online orders apart from warranty exchange.

When I recently went to the Genius Bar to check an issue with a two day old 5S I decided to just return and order a new one. However, the store insisted I take the phone away and arrange the collection/replacement via the online store.
 
if you bought it from apple, yes, you can go into a store and exchange it for the model you want. you don't need to do a return, they'll just charge you the difference.

No you can't. You have to return it to the online store

Bring your item to an Apple Store

Note: An iPhone purchased on the Apple Online Store is ineligible for return to an Apple Retail Store.




Exchange an item

If you purchased your item from Apple in the U.S., you can take it to any U.S. Apple Retail Store for an exchange. Item exchanges are, of course, subject to in-store product availability. It's a good idea to check in-stock availability by calling the Apple Retail Store, or by viewing the product on the Apple Online Store to see if the item is available for pick up locally. Personalized items and custom-configured Macs may not be eligible for exchange at an Apple Retail Store.

Items ordered on the U.S. Apple Online Store that arrived damaged or are incorrect can be returned to any U.S. Apple Retail Store, or*by contacting Customer Service at 1-800-676-2775.

The OP mentions "£" GPB and "QUIDCO" cash back suggesting that he purchased in the UK not the US.

The easiest way for the OP to confirm assuming he/she is in the UK is call a retail store and ask. As I mentioned above my recent experience of an Apple UK retail store was that they will not process returns, refunds or exchanges (except warranty) for orders placed via the UK Apple online store.

I am indeed in the UK and no you cannot return it in store.....must be part of their tax evasion scheme as my credit card has been charged by Apple International (Ireland)
