I know it is possible to go through Microsoft exchange to allow gmail to have push. However, when I use this setting it is not very reliable. All my labeled (like folders) emails that are saved won't load. Am I doing something wrong?

mine works flawlessy all my folders sync fine. I still love signing up for something and hearing the email confirmation come in on my phone not even 2 seconds later.

When deleting emails is there a way to make them go to the gmail "trash folder" instead of archiving to "all mail folder"?

Not with push exchange, you only get true delete by IMAP (setup via the gmail icon) and turning off the archive setting.
