So it seems the pwnage tool thread at the top is a bit dated and searching didn't really turn up exactly what I wanted, so I thought I'd post a specific question. :p

I just sold my 3G on eBay and I'm jailbreaking and unlocking at the request of the buyer. Once it's unlocked through pwnage tool 4.01, will he just be able to throw his SIM card in there and have no issues? For some reason, I expected to have to unlock to a particular carrier.
 
I think you may have some of your terminology mixed up.

Jailbreaking and unlocking are 2 distinct processes. First you'll need to jailbreak using Pwnagetool, and then you'll need to unlock using Ultrasn0w.

But to answer your question, yes Ultrasn0w unlocks for any carrier. After jailbreaking and installing Ultrasn0w (through Cydia), you can pop in any SIM like you said.

I understand the difference between the two. Not that it qualifies me as an expert in the field, but I used to work for an Apple store. :p I was under the impression Pwnagetool would do both for me. I had heard of Ultrasn0w so this makes sense now.
