i look at the catalogue on the site, and there's an option to buy each size with a different band... Like a small silver one with white band and a big silver one with white band.
However, there's only the big size for
Gold Aluminum Case with Midnight Blue Sport Band
I don't see an option for the small version in that color and band together...
Is Apple really such **** or I can buy a small model in that color and band?

Look again...
It shows with that combination on the interactive page.
38mm Gold Aluminum Case w/Midnight Blue Sports band.

Yeah I saw that, obviously the option for this combination naturally exists, what I meant was can I buy a "bundle" (or however you call it) with that color and that band in the box or do they expect you to buy a golden watch with a default color band and then pay extra for the band separately.

I just asked your question, chatting with Apple support.
38mm doesn't come in that configuration. You can't swap it to a band that doesn't come in a standard configuration.
You get to add the band to your order.

and, JayLenchiniMac had some great info that the Royal Blue band on the 42mm will have the gold pin. The 38mm accessory band would not come with a gold pin, to match up with the gold case.

Ha. I know Apple is a luxury company and if you can't afford it you shouldn't buy it and all that stuff, but it's not like they don't sell a smaller cheaper model, they do, they just deny you the cool colors... That's pure evil....

Anyway, thanks for checking it out for me, I might be waiting for the next gen hopefully it will have better bundles.

There are a lot of things in the world that are "pure evil", and I don't really think that Apple's band bundling strategy is one of them. If your world has you thinking this is evil, then I don't know what to say.

If you look at the number of bands and watches, it would be impossible for Apple to bundle every possible combination and no matter which they pick, they won't make everyone happy. A more useful approach would be for them to let you buy the watch without a band at all, then you could pair it with the band of your choice. Then don't get started on the pin color... that would multiple the number of bands even further.

At one point they had gold 38mm with the antique white band but I'm guessing they've discontinued that and are now offering midnight blue on both models. I have this particular and I like Tha midnight blue band it looks nice.

I've just looked it up in the Apple Store and the antique white band is still the standard option for the 38mm Gold Sport.
