This is my first iphone and I have to agree with everyone that the maps software is less than stellar. Google maps/navigation is much more polished.

So that said, how will apple update the maps software -- do they only do so in incremental iOS 6 releases, or will they push just a maps update like Google does with their products on the Android? I'm hoping they get to work polishing up the maps and then push out some updates.

Don't want to have to wait another year for a complete OS update just for maps!

The maps are downloaded from Apple on the fly so they can be constantly updated by Apple, however the maps application itself can only be updated via an iOS update. As it's the quality of the maps themselves that is the biggest problem they can be constantly sorted out and improved.
