When I maximize the Pages window by dragging it so that it fills the entire screen, the page is aligned to the left of the window.

I'd like it to be centred, like the interface in Word.

As an example what I mean, if you turn on track changes, the left margin increases so the page is roughly centred.

If you then click on 'pause tracking', (so comment bubbles don't pop up every time you type something) this is a kind of solution. But this preference isn't saved, so you'd have to do it every time you open up the app.

Any ideas?

Set up your document how you like, including the track changes side bar or the comments area visible. You might as well make any other changes such as fonts, styles, default table & object styles & then Save As Template… You can then set this template to be the default for all new Pages documents in Preferences. i did a quick test & the template opened with the comments area showing.
