I'm getting ready to buy a used Mac Pro to use for editing with Final Cut Studio. I have a choice between the follow processors (both Mac's have the same graphics card and Ram)

Two 2.66GHz Dual-Core Intel Xeon Processors

or

One 3.0GHz Quad-Core Intel Xeon Processors

Any idea if there would be any notice difference in speed between the two? Thanks for the help!
 
A single CPU Quad Core 3.0GHz Mac Pro has never been sold. Dual Dual Core 3.0GHz and Dual Quad Core 3.0GHz *have* been sold, however. The 3.0 GHz model will definitely be the faster choice though.
 
My bad, it's has two dual core 3.0's. Would it be a noticeable difference in speed? I'm hoping for considerably shorter rendering times, but if it's just a few minutes, then I can save myself some money.

Well you will likely get 10-12.5% extra performance reducing each hour of rendering by 6-7 minutes.
