Question about restoring my Iphone 4s

it has been acting quirky, so I want to restore and re jailbreak. I am on IOS 5.0.1 I made a backup but when I go to restore it asks if I want to restor&update, not just restore, obiviously I dont want to update b/c that will take me to the new IOS correct? what do I do? thanks

It is not possible to restore a 4S to anything other than current firmware
There is no boot level exploit for A5 processors

Remember, the 4S jailbreak for 5.0.1 took many months
