Ever since I updated my iphone to iOS 8.1, it's been freezing. Should I go to settings and hit update to 8.2 or do I do it by restoring from iTunes and start as fresh? Would just updating it fix it without deleting and restore from iTunes?

8.2 is not publicly released its a developer beta. 8.1.1 is the current public release. How about this: update to 8.1.1 from your phone. Is your issue fixed? Great. If not? Restore from iTunes to see if that fixes your issue.

Sorry I meant should I update to 8.1.1 (not 8.2) instead of doing restore from iTunes from the scratch? Right now I have 8.1 I think, one step version older than 8.1.1. Would just updating to 8.1.1 fix this issue?

Oh ok I'll try updating it first. Thanks :)
