Would I see a lot of benefit from upgrading the memory from 4 to 8 GB? Its awesomely fast now I have to say though! Also, where would I mostly see the benefits?

Highly unlikely you'd see any benefit, unless you're running multiple memory-intensive apps simultaneously most of the time. The average user would see no benefit.

Look in Activity Monitor. If your Page Outs are more than 1/10th of your Page Ins, you may see a benefit. Otherwise, no.

My page ins are 536.7 and my page outs are 0?

Based on that, you're not even using all of your 4GB. 8GB would be a waste.
