I was doing some investigation/looking around the system, and in console, I noticed that today pretty much theo only file generating logs on 2 systems - and M1 MacBook Pro and an M2 - was launchd.log.

I copied all the entries in the log, which were all from today, and I Pasted it into Word just to see comparitively how much there was. The M1 MacBook Pro had 562 pages of logs entries! The M2 MacBook Pro had 306 pages. I don't see it flooded with the same message, it's lots of different messages.

Is this normal, or is something wrong with either/both systems?
 
Normal. As well as launchd.log you should be looking at the whole unified logging system. Howard Oakley has written extensively on getting a grip on logs and has utilities to make it easier. For example https://eclecticlight.co/2023/01/28/log-literacy-an-essential-skill-for-advanced-users/ but there are lots of others. You may also want to get on top of using the `log` command in Terminal.
None of this is easy (to say the least). And it is easy to get worried by what you see even when things are normal!
