If I am staying in a hotel that offers free wifi then does that mean it's free on my iPhone even tho I do not hav the wifi bolt on for my simplicity sim?
 
Yes.

The 'Free Wifi' is a bit misleading. It means free use of 'The Cloud' and BT Openzone hotspots (starbucks, macdonalds etc).

You can use the hotel wifi just like you would use your wifi at home.
