Question regarding Stand ring

I'm currently trying out the charge while brushing teeth/showering method, so I can wear my watch overnight to track sleep. My question is, if I were to stand with my iPhone while my watch charges, does it count towards my standing ring?

Nope, unless you were standing enough during the hour before (or after) putting it on the charger.

Movement with the phone by itself doesn't count towards the Stand ring at all.
