I have a few questions:

1. What are the benefits of jailbreaking an Ipod Touch?

2. Can you show me some good websites for iPod Touch apps and hacking/development.

1) Themes, Emulation, cool apps, stuff that apple does not allow.
2) All you really need is Cydia. And some sources.
