Should my Ipod Touch's case be removed when charging? I thought I saw somewhere that people were recommending taking off the case so that the battery didn't overheat while charging.

This isn't an opinion poll question, it's a simple common sence question. And the answer is to only remove the case before charging if the iPod's charging slot is impeded. If it is, then your iPod cover is of bad design.
Your iPod might also heat up when doing things like charging; but if it heats up enough to melting temparatures then you have a faulty iPod.
Therefor, 99% of users need not remover the cover.

I used to race RC cars, now them there batteries used to get smoking hot!
And so did the modded 35000 rpm motors.
I also noticed how hot a cd gets in the car player after a while, extremely hot.
My iPod Touch is charging right now on the couch caseless (I still don't have a case and it's been 2 weeks!) and it's barely noticeable that it's warm right above the port. So I wouldn't worry too much about it. I can't imagine that it would overheat with the case on.
I use a Belkin silicone sleeve on my touch and have charged it with and without the sleeve. It was slightly warm, but not scorching, Time Capsule-hot. 😀 Your iPod should be fine. 😎
