Hi guys I'm new to this forum and have a quick question. I recently got a 4s for christmas and I have activated photo stream and all my mac stuff is updated to the latest software. My question was can you take old exsisting photos from your Iphone and send them to photo stream?

Yes. Photo Stream also has an upload folder and pics placed in it upload into Photo Stream. In Windows you choose that folder from the iCloud Control Panel. Sorry, I don't know where it is on a Mac but it has been discussed before so hopefully a quick search will find it for you.
