I'll be getting an iPad in a few weeks as my sole device until I get an iMac in a few months. Until then, I'll be using my partners MacBook to sync music, movies etc etc in the meantime. My question is: everytime we're on the same wifi network (which will be most of the time), will my iPad automatically sync to her MacBook and vice versa everytime something new is done ie new photos, iMessage, safari history and so forth? This would be really annoying and I won't if this is the case.

Just turn off wifi sync

It would but the requirements would be that her machine have an iTunes profile where you can sign in (for your iPad) but either way, the accounts on the iPad and iTunes have to be the same in order for it to sync. I do something similar for my daughter's iPod - I have her iTunes account on my Mini and it's set to sync her iPod when available. However, normally it is in MY account so it syncs my iOS devices not knowing hers exists. So, you see, it can be done, but it requires a bit of planning and slight red tape to accomplish.

Hmmmmm, could be really annoying. She takes millions of photos do photo stream would wreck my head too, maybe I should focus on getting the iMac first and then the iPad later.

I don't think the syncing is a big deal. According to the device settings, the sync won't occur unless the iPad is plugged in to a power source and is on the same wifi network (this also applies to iPhones). iTunes also has to be on and running.

To be honest I didn't even realize that the sync could occur automatically, until I came across this thread. I've always had to do it manually. It's probably because I tend to plug my devices in when I'm going to bed, and my computer is in standby mode.

Regarding photos, you can turn off the photo syncing. At this point, the photo syncing seems to be more about putting photos from your computer onto the i-device, rather than the other way around. Photos from i-devices are downloaded to the computer through the iCloud Photostream.

Lastly, you're not obligated to sync to a computer. You can make backups to iCloud, if you'd prefer.

No. It won't automatically. You have to sign into accounts on both. Besides, you can turn syncing off.
