(I apologise if this is really obvious but every review i find for the Series 3 doesn't confirm this) Can i go out for a run/walk etc with just a Series 3 GPS only Apple Watch and it will track & map my route, then sync with iPhone once i get back home.

Ok thanks. Can I just use the stock workout app or do I need to use a mapmyrun type app?

You could do that already with AW2 - but with AW3 you also get Hight-Tracking, which really makes it a complete solution for running and biking.. 🙂
