In the Windows version of Excel, you can hit F2 and quickly edit the contents of a cell. This shortcut does not work in the Mac version. Does anyone know if there is a similar keyboard shortcut to enter information into a cell without having to double-click the cell? (This is assuming there is already text in the cell that I do not want to overwrite by simply starting to type).

You probably need to use the fn key to access the F keys.

fn+F2 works for me

You can also remap keys using system preferences / keyboard shortcuts
