That'll only work for that particular file and not every other avi file. how do you make it for ALL avi files?

To enable it you need to go to "Open With" and select "Other," navigate to Quicktime Player X and check the "Always Open With" box. THEN you need to bring up the Get Info window and the Change All button will now work for that file type.
