I'd suggest getting a program like iStat Menus that keeps your memory usage in the menu bar at all times. It'll give you a pretty good indication of what your usage is like during different scenarios.

Same info, it just lives in the menu bar all the time, so it stays out of the way. To the left of it is network up/down, and left of that is a tiny historical CPU graph. The program lets you configure how they appear in your menu bar. You get in the habit of glancing up there now and then to quickly assess how things are running.

I keep thinking about ordering 64gb, but it's just going to delay how often I restart really??? It won't actually run faster than 32gb?

And yes, I fill up 32gb by the of the night every night. D810 raw files are 70mb each and there are 1500-3500 per wedding and my company shoots 40 weddings a year.

What do you mean by "fill up"? Don't look at the RAM occupied. Open the Activity monitor and look at the memory pressure; if it's green, you have RAM available ;)

And if this indicator is always green, your machine won't be faster with 64GB, you will just have spent a lot of cash for nothing...
I seriously doubt you don't have enough with 32GB, even with a lot of D800 files openend ;)
 
Ya I'm going to settle with 16gb. Don't think I need the 32gb yet alone 64gb.

Man can't wait to see if the Mac will run at 2400mhz or 1866mhz

I can now finally CONFIRM after (lost tracking and package in delivery causing one day delay) my iMac arrived today Kingston HyperX 2133MHz RAM works. It boots up. It shows 2133MHz on system profile and also on Geekbench. I run Luxmark, Geekbench, Unigine and Cinebench and the computer didn't crash. This prooves wrong the OWC claims that new iMac can only run RAM highest at 1866. No I haven't run ramtest on it cause that would take days and I just want to get the computer operational.

I've had a hard time following everything here so I apologize if I missed this, but are there any 16GB sticks compatible with the new 27" iMacs that aren't from OWC?

I'd like to add two 16GB sticks to the existing 8GB sticks that come with the system for 40GB total and would hate paying way more than I have to.

Apparently the HyperX runs 2133 in CL11 and 1866 in CL10 so in that sense the difference is small. If you compare with the CL13 stock RAM then there is difference.. as much as 40-45% on paper though in most of the real life applications you will not notice it. But I do lots of rendering and video stuff and the HyperX was still cheap so I went for the best since those fractions of seconds start to add up when the comp is converting footage for hours and hours

Solo or together with the pre-installed 8GB RAM?

Solo... all HyperX... there's no point buying HyperX if you gonna leave that ****** stock RAM in. I don't know if it would work cause I didn't test it.. but it definitely will make it as slow as the stock RAM or worst case scenario even slower

All I know is, after eight hours in post-production, the whole computer slows down dramatically. Restart and boom everything is fast again. Makes sense to me. But if 64gb isn't actually faster than 32gb I don't want it.

Now that the 2133 is confirmed, just waiting for some stability tests. My iMacs are preparing for shipment, so I need to decide soon haha

There are plenty of programs out there to show you how your hardware is being used. Activity Monitor is built-in. iStat Menus is a nice way to show it constantly in your menu bar. It might not be RAM slowing you down, perhaps something is chewing up your CPU time?

What you're describing would be a significant memory leak if it were truly using and not freeing your RAM. I wouldn't expect that from today's pro apps. Throwing more memory at the problem is fine, but if it's really a leak, all 64GB will do is make you reboot half as often. Any sane program would release that memory once you close it. I would use Activity Monitor to determine what program is actually the problem and try to fix the issue, not the symptom.

I had this before with testing RAM from newer MacBooks in older ones.

But this time I put the 2 x 8 GB 1.333 MHz from my MacBook Pro (Late 2011) in my iMac (Late 2015) after removing the 2 x 4 GB 1.866 MHz.

Apple warned me that the beeping would occur if the RAM was not compatible with the new machine.
 
Plus, you didn't want that RAM in there, even if it did work. That's significantly slower RAM than your system ships with. But yes, beeping means the memory isn't kosher.

So I got the corsair vengeance 1866 mhz sticks... 2 x 8gb to be exact.. i left the original apple ram in there, expecting it to all work at 1866... Instead, it recognized all 24gb of ram, but the system under clocked all of it to 1600... This is what it says in the RAM overview:
24 GB 1600 MHz DDR3

So it seems that unless you match the 1867 mhz of the original apple ram, and you leave the apple sticks in there.. it under clocks all your ram down to 1600 MHz.. which is a HUGE bummer! Oh well.. time to try and sell my original apple ram and buy some more 3rd party stuff! huge huge bummer =(
