I've backed up my iPhoto library (via symlinks) to my dropbox folder. On dropbox, it appears as a single folder with many subfolders.

Is there a way to 'build' the folders back into the regular library?

Here is something you might try...

In iPhoto, create a new empty iPhoto Library. Close iPhoto. Pick the newly created iPhoto library and select "show package contents". Copy all the files and folders from dropbox inside the new iPhoto Library. Launch iPhoto again and see if it freaks out or simply acts as if all those files were there to begin with.

BTW, I never let iPhoto copy my photos to iPhoto Library any more. This way iPhoto library is about 5% of the size of the photos it manages. This is critical as I have over 100 gig of photos in iPhoto these days.
 
I would be much easier with the use of a flash drive, IMO. But as long as you keep the folder structure intact, I don't see why there would be a problem.
