I am in the 3-5 hr range when on wireless, full brightness and several tabs open with itunes and a couple other apps open.

That 7 hrs is a tad misleading.

on a related note, I am noticing that the fans are a tad noisier when they get working.

It's been independently verified by every single independent view +/- 20 minutes. All these reviews use there own tests.

No. You either have a workload that is beyond the definition of "typical light" that all these independent reviewers use, or you have a defective battery.
 
This thread made me curious, I unplugged my new 2011 MBPro 13 inch and set bout the task of depleting the battery to the point where it auto shuts down.

Screen Brightness= 100%
Keyboard Brightness= 100%
Caffeine= On
Activity= Web Browsing, Music and an occasional download from AppStore.

Conclusion= 4.5 Hours.

Satisfaction= Completely satisfied with how it performed all I wanted.

Speculation= 7 hours may be possible to some users, but not the way I like to browse and post. I realize turning down the settings will increase my battery life, but this is why my Mac is MY Mac, I use it MY WAY.
