I just got my new Macbook Pro Retina and update it to Yosemite. I now want to recover/get some files from my Time Machine backup of my previous Macbook but don't want to migrate my whole Time machine onto my new Mac. So for example I want some folders from my Documents folder of my older Mac, but not the whole folder. And some specific Apps/Programs and not all of them.

You don't need to down grade. Just use the free application EtreCheck and run it. The program will show incompatible services that will slow down your Mac in RED and the program will show where to delete that service. Once you manually deleted those incompatible services do an immediate reboot. This should speed up your Mac.

Plus just use /Applictions/Utilities/Migration Assistant.app and connect your current Mac to the I,d one and transfer what you want it Application/Documents/Pictures & Music. Just IMHO you shouldn't transfer Network settings because the network stack changed a little so transferred settings can get messed up. Just manually redo your Network settings.
